Join author, educator and butcher Meredith Leigh in partnership with XIT Ranch for an intensive, hands-on workshop. With professional guidance, you will learn butchery and how to cure meats. This two day course covers hog butchery, sausage making, dry curing of meats, fermented sausages, cooked charcuterie, and koji charcuterie. Butchering and value added product applications for beef will also be included. All skill levels are encouraged to attend. As you learn technique, you will immerse in community with your fellow class participants, sharing in meals and in discussion about mindful production and consumption, food system issues, sustainability, and the intersection of food with issues of climate change and justice. Space is limited to 15 participants for this hands-on culinary experience.
This class is appropriate for farmers and ranchers, chefs, and advanced home cooks.
At the end of the event we will have a class feast where you can taste your creations, and in partnership with Colorado Kitchen Collective, lunch is provided on both days. Camping on site, with additional meals are available in addition to your base ticket price. Please review ticket options carefully as there are several options for you to choose from!

General admission is $775/person and includes instruction and ongoing mentorship, lunch both days and Sunday feast, electronic copies of The Ethical Meat Handbook and Pure Charcuterie, meat to take home.
Camping/Meals Add-on Package: $250/person includes camping at XIT Ranch, hot breakfast both days, and prepared dinner on Friday and Saturday evenings.
